At Panificio Mulara there are many variations: from the pistachio one with 50% pistachio cream to the one with apricots, almond paste, and almond chocolate, authentic expressions of Sicilian tradition. And captivating versions like the limoncello dove, where the dough is entirely soaked in liquor, the chocolate one with Modica Igp chocolate cream, and the one with berries and white chocolate. There are also types that cater to more classic palates, such as the peach and milk chocolate dove and the beloved traditional dove. Mulara’s leavened products are small 100% artisanal taste masterpieces, fragrant, soft, and tasty, made only with selected raw materials. The only leavening agent is the mother yeast that Mulara refreshes, every day, for over 50 years. The doves are naturally leavened for 36 hours and it takes about three days to prepare one dove. Behind Mulara is Lorenzo, the true bakery chef of Panificio Mulara, who starts doing this job out of love. As a teenager, he falls in love with Angela Mulara and after his military service, Angela’s father invites him to work at the bakery. This is how Lorenzo finds his way and his vocation. Together with Angela, he takes the reins of the bakery and starts introducing new preparations and products, and he especially becomes passionate about leavened products, for which he will attend many learning and training courses, including one with the great master Rolando Morandin, who came directly to Barrafranca for a private masterclass.
