For the recipe of cod in sweet and sour, buy at your fishmonger trusted cod already soaked (if possible, keep it in water for a night as a precaution). Cut it into pieces, wash and dab slightly to remove excess water.
Take a plate and pour semolina flour. Lightly flour the cod beating it to eliminate excess flour.
Prepare a pan with plenty of seed oil and fry the cod, turning it from all sides, until golden.
Cut the onions into slices and let them wilt in a pan with 3 tablespoons of extra virgin olive oil over low heat, to prevent them from burning.
Once the onions are golden brown, add the black olives, capers, tomato sauce and a pinch of pepper. Pay attention to the amount of salt needed in the dish because of the natural salty taste of cod; you can always adjust the salting after cooking, if necessary.
Let cook for 3-4 minutes, then add the previously fried pieces of cod. If the sauce is too thick, you can add a few tablespoons of hot water.
Cover and continue cooking for about 15 minutes.
Two minutes before turning off the heat, sprinkle the cod with a mixture of vinegar and dissolved sugar, letting it fade. The dish should be served lukewarm to allow the vinegar to evaporate completely and allow the ingredients to flavor each other.

However, cod is also rich in cholesterol and, above all, sodium, two nutrients whose excesses may pose a risk to cardiovascular health.
Healthy adults should not exceed a daily intake of cholesterol above 300 mg and sodium above 2000 mg.
