The ancient recipes of the local culinary tradition will be at the center – Thursday 29 and Friday 30 December in Alia – of the Traditions Fair, an event organized under the patronage of the Department of Productive Activities of the Sicilian Region. The event, which does not neglect the enhancement of the rock architecture spectacle of the Gurfa Caves, was created with the aim of transferring the traditions of the past to the new generations, both in the working and culinary fields. An attempt to get out of the isolation that distinguishes the towns of the Sicilian hinterland and create the conditions for development, by safeguarding the key values and traditions of previous generations.
The protagonist will be there takentypical dessert of Alia which last year became a garrison Slow food, at the end of a journey which, starting from an ancient traditional recipe, has created an armature that revolves around the raw materials needed to prepare it: Maiorca wheat and almonds. During the event, Alia’s ovens and bars will let you taste the beer for free taken to visitors, along via Garibaldi. There Traditions Fair will be inaugurated on Thursday 29 with a conference, which will be attended by the mayor of Alia Antonino Guccione, the municipal councilor for productive activities Gaetano Siragusa and the chef Vincenzo Rinchiuso as representative Gourmetravelers. Among the speakers at the conference, two representatives of the regional government: the councilor for Productive Activities, Edy Tamajo and the councilor for Infrastructures and Transport, Alessandro Aricò. This was followed by the presentation of the book by the journalist and food and wine expert Mario Liberto, entitled Sustainable legumeswith the Dutch legume entrepreneur Leon With as guest.
Among the events not to be missed, also on Thursday 29, in via Garibaldi, the cooking workshop in which the chefs and pastry chefs of the area will participate, who will prepare the typical recipes. Among the participants in the cooking show chef Vincenzo Rinchiuso who will cook the tagliatelle with mazzareddi and pecorino, the chef Salvo Paolo Mangiapane, cooking teacher at the Alia hotel institute, who will prepare the pitirriboth in the durum wheat semolina variant and in the one with chickpea flour, and the pastry chef Giuseppe Sparacello, who will make the Sicilian cassata. They will collaborate to cooking show the students of the hotel management institute of Alia. Also interesting is the wool laboratory, curated by Ninni Fussone of the association We are Marcatobiancoand the exhibition on woolen artefacts exhibited at Great companyon via Garibaldi. During the event, the rocky area of the Grotte della Gurfa can be visited free of charge, with guided tours by the operators of the Municipality of Alia.
